* docs: add D8-D10 code compliance audit reports for all 5 components

Code compliance audits comparing specs against source code found 61
findings across protocol crate, gateway, node, modem, and BLE pairing
tool. Reports saved to docs/audits/.

* fix: correct sdkconfig file path in modem audit report

The Finding and Recommendation for MD-0402 referenced a non-existent
`sdkconfig.defaults.esp32s3` file. Updated both to point to the actual
`crates/sonde-modem/sdkconfig.defaults`.
