feat(ci): add macOS DMG with README for beta releases

- Create DMG on macOS runner using hdiutil with binary + install guide
- docs/MACOS_INSTALL.txt explains Gatekeeper workaround (right-click
  Open, xattr command, System Settings)
- Pre-release job copies DMG to archives alongside tar.gz/zip
- Release notes now highlight the DMG and document the Gatekeeper bypass
