Update Go version to 1.26.0 in Dockerfile (#1203)

# Issue

The Go version in the Dockerfile is quite ancient, and if used to compile Go apps (like we do), downloads an updated toolchain. Unfortunately this mechanism is buggy, and coverage calculation fails due to it: https://github.com/golang/go/issues/75031

# Fix

Bump to the latest version of Go.
