feat: add support for application/json-patch+json content-type

Add support for parsing request bodies with application/json-patch+json
content-type in Operation class. This enables proper handling of JSON
Patch (RFC 6902) requests.

Changes:
- Modified createJSONParser() to accept optional content-type parameter
- Added application/json-patch+json handling in createBodyValidators()
- Added comprehensive test suite for JSON Patch support
