fix(deps): update Mecha.xUnit and ObjectCartographer

This commit updates NuGet package dependencies to their latest
patch versions for improved stability and compatibility.

- Bump Mecha.xUnit in Archivist.OCR.Tests.csproj from 3.3.6 to 3.3.7
- Bump ObjectCartographer in Archivist.csproj from 4.3.2 to 4.3.3
