feat: request logger body logging with masking (#80)

Add opt-in request/response body logging with:
- LogRequestBody/LogResponseBody flags
- MaxBodySize limit (default 1KB)
- Auto-masking of sensitive fields (password, token, etc.)
- AllowedPaths to restrict to specific endpoints
- "..." suffix when truncated
