refactor: Merge wallet into mediator compose files, add auto-setup

- Merge wallet-signet/mainnet/testnet4 compose files into their
  respective btc-{network} compose files (node + wallet + mediator)
- Rename wallet services to btc-{network}-wallet for consistency
- Add testnet4 as valid WalletNetwork type
- Auto-setup watch-only wallet on startup with retry loop
- Make setup non-fatal if bitcoind lacks sqlite support
- Add wallet service retry loop in mediator waitForChain
- Remove obsolete ARCHON_SAT_WALLET config and env vars
