Fix soft delete for MySQL and SQLite compatibility

Use CURRENT_TIMESTAMP instead of time.Now() to avoid SQLite driver
formatting issues (monotonic clock in string representation). Remove
explicit TIMESTAMPTZ type from test to let auto-detection pick the
correct type per engine (DATETIME for MySQL, TIMESTAMP for PostgreSQL,
TEXT for SQLite).
