fix: revert convert_config_to_list value filtering that broke ProjectIdent

The previous change rejected all list/tuple values to handle Ecto config
serialization, but this also stripped ProjectIdent results (which are
maps with list values of file paths). Instead, filter only the specific
non-serializable Ecto keys (:ecto_repos, Lei.Repo).

Fixes 18 test failures: ProjectIdentTest, ScannerModuleScanTest,
SarifTaskTest, ZarfGateTaskTest.
