Update main transcript model to gemini-3.1-flash-lite-preview

- Replaced gemini-2.5-flash-lite-preview-06-17 with gemini-3.1-flash-lite-preview as the primary transcription model.
- Kept gemini-2.5-flash as the fallback model.
- Updated thinkingConfig comment in transcribeAV to clarify it is retained for the Gemini 2.5 fallback.
- Retained temperature setting at 0.5 and avoided introducing new Gemini 3 specific parameters.
- Relaxed string assertion in util.js test (removed '一招') to accommodate the new model's transcript output.
- Wrapped transcript test assertion in try-finally to guarantee cleanup of Elasticsearch documents on failure.
