feat: Update Grafana dashboard styling with semantic colors and gradients (#152)

Apply modern dark-theme styling across all 4 dashboards: semantic color
palette (green=health, blue=secondary, orange=warning, red=critical),
gradient fills, smooth line interpolation, and thicker lines.

Closes #151
