refactor(materializer): reject unknown format in formatExportBatch; default empty to ingr

- formatExportBatch now returns error for empty or unknown format strings
  instead of silently falling through to INGR
- buildDefaultView and buildFKViews resolve empty view.Format to "ingr"
  before calling formatExportBatch
- Tests updated: TestFormatINGR_DefaultFormatIsINGR replaced with
  TestFormatExportBatch_EmptyFormatReturnsError and
  TestFormatExportBatch_UnknownFormatReturnsError
- TestBuildDefaultView_FormatExportBatchError replaced with
  TestBuildDefaultView_EmptyFormatDefaultsToINGR which also verifies
  that the written file is INGR format
