feat: Add cl-hive (Core Lightning) Docker service

Integrate cl-hive as a Docker service alongside existing Archon
services, connecting to the mainnet Bitcoin node for Lightning
Network fleet coordination.

- Add docker-compose.cln-mainnet.yml with cl-hive-node service
- Include cl-hive compose in docker-compose.yml
- Add CLN environment variables to sample.env
- Exclude cln-mainnet data directory from git
