Add unit tests for Android entity mappers, entities, and navigation screens (#567)

Cover previously untested EntityMappers (toEntity/toModel round-trip conversions
for all 15 model types), Room entity data classes, and Screen navigation route
definitions including parameterized createRoute methods.
