Add in-memory cache for stats endpoints to improve performance (#540)

Introduces StatsCacheService with per-user, per-endpoint caching and 5-minute TTL
for the expensive stats computations (dashboard, daily-timeline, correlations,
emotion-scatter, food-distribution). Cache is automatically invalidated when any
data mutation occurs across all 13 controllers that modify stats-relevant data.
