chore: remove Sphinx documentation infrastructure and unused Invenio defaults

- Delete docs/ directory and all Sphinx-related files
- Delete AUTHORS.rst, CONTRIBUTING.rst, INSTALL.rst, SECURITY.rst
- Add CONTRIBUTING.md and INSTALL.md (Markdown replacements)
- Remove stale.yml GitHub Actions workflow
- Remove Sphinx dependency from dev dependencies in pyproject.toml
- Remove --doctest-glob='*.rst' and docs/ from pytest configuration
- Remove sphinx-build step from scripts/test
- Remove RST indentation rules from .editorconfig
- Fix duplicate rero-invenio-base entry in dependencies
