Fix category dialog visibility by using AppCompat AlertDialog (#506)

Replace android.app.AlertDialog with androidx.appcompat.app.AlertDialog
in AddHabitFragment, HomeFragment, SettingsFragment, and
EmotionalStateFragment. The framework AlertDialog does not properly
inherit Material Components theme styling, causing dialog titles like
"Create New Category" to render with invisible text.
