Add `_count` parameter to `$find` operation (#8456)

Our initial guess of a reasonable value of 20 seems to already be
troublesome for some folks. Let's make this configurable via the
`_count` parameter.

If you request too large of a page size, we error early instead of
generating huge pages. For now we are matching the
`DEFAULT_MAX_SEARCH_COUNT`, which is set to 1000.
