Add process state sensor to distinguish crash vs shutdown (#241)

* Add process state sensor to distinguish crash from graceful shutdown

Publishes to garagecam/process/state (retained):
- "running" on connect
- "stopped" on graceful exit (before status goes offline)
- On crash, LWT sets status offline but process/state stays "running"

Registers MQTT discovery sensor for HA auto-detection.

* Fix sync_local_to_remote return values, align discovery entity ID, add tests

- sync_local_to_remote bare returns now return explicit booleans
- Discovery topic uses garagecam-process so HA creates sensor.garagecam_process
- Add tests for on_connect and on_disconnect callbacks
