feat(projects): add net10.0 support and update test deps

Adds net10.0 to all project target frameworks and updates Mecha.xUnit in test project.

- Updates TargetFrameworks in all .csproj files to include net10.0
- Bumps Mecha.xUnit version in ObjectCartographer.Tests.csproj from 3.2.11 to 3.2.12
