Add Coveralls workflow for parallel coverage uploads (#330)

Upload coverage data to Coveralls from all test sources using parallel
mode: shared, webserver, and desktop modules (JaCoCo XML) plus website
(lcov via Vitest). Add lcov reporter to website vite config for
Coveralls compatibility.
