test(firmware): increase flash script coverage to ~90%

Notes:
    Summary: Enhanced tests/flash_script_all_in_one.sh to cover edge cases in logging and error handling. Reformatted the log function in flash.sh to improve coverage tracking. Added coverage/ to .gitignore to avoid committing artifacts and secrets.
