test: Increase test coverage and reorganize test infrastructure (#1227)

Create a dedicated `tenant_api` folder to better organize test case
modules. Improving the test structure and makes it clearer which cases
are used for tenant API testing.

Removed unused test cases:
- astarte_mock_case.ex (no longer needed)
- channel_case.ex (channel tests not in use)

Configures the test environment to disable metric collection as it's 
not needed during test runs. This reduces noise in test output and
prevents warnings when running dialyzer.

Adds new test cases to improve overall code coverage and convert
applicable tests to run asynchronously where safe to do so.
