fix: hardcode APP_NAME in production stage

The ARG APP_NAME doesn't carry over from build stage to runtime image.
When not provided during build, APP_NAME is empty, causing:
  /bin/sh: /opt/app/bin/: Permission denied

Hardcoding the value like the builder stage ensures the app starts.
