ci: use more tags for advertising hostname, subtypes, key/value pairs and so on

to cover static services better to let the CI make sure it more or less
works when PRs are opened and it's prompted by a recent PR.

There are actually issues reported by LSan/UBSan there but they aren't
triggerable by the basic tests and can be left for another day.

The coverage in static-services went from
Lines: 47.1%, Functions: 78.3%, Branches: 38.3%
to
Lines: 72.4%, Functions: 95.7%, Branches: 57.4%
