Add NFS fallback with local save and MQTT status sensor (#236)

* Add local fallback for NFS save path to prevent crashes on stale mounts

When the NFS path at /data/capture is unavailable (e.g. stale file handle),
saves now fall back to /data/local/<date>. A sync function moves files back
to NFS once it recovers, running each iteration of the main loop.

* Add MQTT binary sensor for NFS storage status

Publishes an NFS Storage problem sensor to Home Assistant via MQTT
discovery so HA can trigger automations when the NFS mount is unavailable
and the app falls back to local storage.
