fix: Serialize `chunk_fn` for Contextualized Embedder and improve typing (#51)

* fix: serialize chunk_fn for VoyageContextualizedDocumentEmbedder

- Use Haystack serialize_callable/deserialize_callable in to_dict/from_dict
- Tighten chunk_fn type to Callable[[str], list[str]]
- Add explicit run() return types across all components
- Fix multimodal _convert_content_item param type to MultimodalContent
- Update serialization tests to cover custom chunk_fn round-trip

* chore: add dotenv support to examples and clean up pyproject config

- Load .env in examples with python-dotenv (graceful ImportError fallback)
- Add python-dotenv to dev dependencies
- Update CONTRIBUTING with API key setup instructions
- Remove dead mypy config and redundant ty src config
- Reformat pytest markers and ignore invalid-argument-type in ty for tests
