test: increase code coverage for Host and Firmware

- Host: Add smoke tests for RealDataProvider and serialization tests for DeviceMessage.
- Firmware: Implement new test infrastructure with mocks for Arduino, WiFi, and GFX.
- Firmware: Add unit tests for InputHandler covering click, double-click, and long-hold reset logic.
- Firmware: Reorganize tests into subdirectories for better PlatformIO compatibility.
- Taskfile: Update coverage task to ignore gcovr errors due to file moves.
