Update Dockerfile to Go 1.25 and improve setup docs

Updates the Dockerfile base image to golang:1.25-alpine to match the Go
version upgrade from PR #334. Also adds detailed setup instructions for
the Gmail OAuth token generation process, clarifying that token.dev.json
must be generated locally before using docker-compose.
