Fix go.mod editing in the release bump bot (#3997)

The current implementation for edit go.mod to modify a module version,
is to use sed. The sed expression used placeholder (*), causing the
change of wrong modules. e.g. when changing the `kubevirt.io/kubevirt`
module, cuased the change of `kubevirt.io/kubevirt-migration-operator`.

The fix includes:
* using `go mod edit` instead of `sed`.
* removed moduels that are no longer imported in go.mod
  (`kubevirt.io/client-go` and `kubevirt.io/kubevirt`), from the bot.
* add new files from the vendor directory to the git tree.
