Remove prop-types all around the UI

We have not been maintaining them, they're inconsistent and more
importantly they're not even useful anymore. React stopped using them
completely in react 19 which means you could put anything in them and
you wouldn't even see a single warning...

The alternative is to switch to typescript but that's another story for
another ~~day~~year.
