fix(e2e): replace remaining time.Sleep with polling helper

Extract clickSessionByName helper that uses require.Eventually to poll
the session sidebar until the target session appears, replacing manual
sleep-retry loops in TestPlanParsingEdgeCases.

Only 2 intentional sleeps remain in sse_test.go for negative assertions
(verifying timer/scroll position does NOT change over a time window).
