Add `client.post<T>` generic type annotation (#8317)

* Add `client.post<T>` generic type annotation

This lets users of this method specify what they expect the server
response type to be in the same way as `client.get<T>`. This helps us
remove more `any` types that opt the user out of all type safety.

For now we are defaulting this type parameter to `any` to maintain
backwards compatibility for any users. I will be advocating for the
breaking change to replace these defaults with `unknown` in Medplum v6.
