docs: add comprehensive VIPS configuration documentation

- Document VIPS_CONCURRENCY and its impact on threading
- Explain VIPS operation cache settings (MAX_CACHE_MEM, MAX_CACHE_SIZE, MAX_CACHE_FILES)
- Document IMAGOR_WATERMARK_CACHE_SIZE for watermark caching
- Add performance tuning guidance for different deployment scenarios
- Include all VIPS flags in the configuration reference section

These flags were implemented in the code but not documented in the README,
making it difficult for users to tune imagor performance for their specific use cases.
