refactor!: simplify API to match encoding/json pattern

BREAKING CHANGE: Unified Unmarshal API replaces specialized functions.

- Unmarshal(data, &target) now handles all types (structs, maps, slices)
- Removed: UnmarshalStruct, UnmarshalStructWithConfig
- Removed: UnmarshalMapStringAny, UnmarshalMapStringString
- Removed: DecodeMapFunc, DecodeStringMapFunc, DecodeStructFunc
- Added: decodeInto with reflection-based type dispatch
- Updated README with new API examples
