ci: update GitHub Actions workflows for current stack

- Add vitest coverage configuration with v8 provider
- Update build workflow to run tests with coverage
- Update deploy workflow to explicitly target gh-pages branch
- Add CNAME file for custom domain (geofiddle.com)
- Install @vitest/coverage-v8 dependency
