fix: explicitly delete excluded chart files to prevent duplicate CRDs (#2075)

The release workflow previously relied on `git diff --cached` to
identify files to exclude. Since the duplicate CRD is listed in
`.gitignore`, it was not staged and therefore skipped by the exclusion
logic, remaining in the chart package.

This fix updates the workflow to iterate directly over the configured
`excludeChartFiles` list. If a file cannot be restored from HEAD
(because it is ignored or untracked), it is now explicitly deleted from
the directory to ensure it is not included in the release.
