Allow canonical payload hash to be non-SHA256

This allows for the special value "UNSIGNED-PAYLOAD" to be used in
the canonical request, which is required for unsigned S3 operations.

A previous commit made this an Option<String>, but this complicates
handling elsewhere with unwrap(). AFAICT, some value (though not
necessarily a SHA-256 hash) is always required in the canonical
request.
