fix: wrap factory functions in runInInjectionContext for Angular 16+

This fixes NG0203 errors when using MockModule with Angular Material
modules in Angular 21. The issue occurs because Angular 21 has stricter
injection context requirements, and inject() calls inside factory
functions need to run within a proper injection context.

The fix dynamically checks for runInInjectionContext availability
(Angular 16+) and wraps the factory body to ensure inject() calls
work correctly. Falls back gracefully for older Angular versions.
