refactor: encapsulate colors in struct with methods

- create Colors struct with private fields and accessor methods
- add loadColorsWithFallback() for embedded defaults fallback
- update Logger to receive Colors via constructor injection
- update main.go and helpers to pass Colors explicitly
- replace TestParseRGB with TestParseColorOrPanic
