GoReleaser: tweak reproducibility-related settings

* The release date/time (visible in `skeema version`) now uses the commit
  timestamp, rather than the timestamp of GoReleaser execution.
* Ditto for the mtime of the resulting binaries.
* Enable Go's -trimpath option to strip local paths from the Actions runner
