fix(normalize): handle atoms and recursive struct normalization (#8)

- Add normalize/1 clause for atoms to convert them to strings
- Recursively normalize maps returned by @derive encoders
- Add all_primitive_values?/1 helper to check if maps have only primitives
- Use all_primitive_values? to prevent tabular format for nested data
- Add comprehensive tests for normalize function
