fix: Merge coverage profiles from all packages

When running 'go test ./... -coverprofile', Go only saves coverage
for the last package. This fix merges coverage profiles from all
packages by iterating through them and appending their coverage.

This should significantly improve the reported coverage from ~68%
to the actual coverage across all packages.
