feat(docs): upgrade to Astro Starlight documentation site (#74)

Upgrades the documentation site from legacy docs structure to Astro Starlight, providing a modern, searchable documentation experience.

## Key Changes
- New Astro Starlight documentation site in docs-site/
- Modern search and navigation
- Custom ThumbCode brand styling
- Fixed TypeScript config to exclude docs-site from root compilation
- Updated pnpm-lock.yaml with docs-site dependencies

- Dark/light mode support
- Responsive mobile navigation
- API reference documentation ready

## Build & CI
