Add new proxyEntry lifecycle hook (#2621)

This PR adds a new `proxyEntry` lifecycle hook. This hook can be defined in collections and plugins to wrap entries with a Proxy by returning a Proxy handler. The hook receives the following context objects depending on where they are defined:

- From a collection: `{ parent, entry }`
- From a plugin: `{ plugin, parent, entry }`

As part of this update, `propStore` has been refactored to incorporate the use of `proxyEntry`. This allows property watching on more complex properties, including getter/setters. Documentation has also been added to describe these updates.
