Use channel-based encoder pool to prevent GC clearing

sync.Pool gets cleared by GC under memory pressure, causing expensive
encoder reinitialization (~8MB per encoder). Channel-based pool keeps
encoders alive, reducing total allocations by 66% (26.8GB -> 9.2GB).
