test: add test for parsing flags in opt_test.cc

Added `parse_options_test` to verify that `rendezllama::parse_options` correctly populates `ChatOptions` from command-line arguments. Tested flags include `--model`, `--protagonist`, `--confidant`, `--thread_count`, and `--coprocess_mode_on`.

The new test function is placed in alphabetical order in `test/chat/opt_test.cc`.
