refactor: replace Uint8List with Bytes type and add test coverage

- Replace Uint8List usage with Bytes type across codebase for consistency
- Add comprehensive tests for platform key generation and signing
- Update documentation examples to use Bytes type
- Add coverage badge to README
- Clean up test imports and remove unused code
