refactor: remove excludeSpam parameter from v2 safes endpoint

Per review feedback, remove the excludeSpam parameter from the v2 safes
endpoint. The trusted parameter is kept as it still provides value for
filtering non-trash tokens via the Zerion API.

Note: The suggestion to use _fetchAndCacheChainMapping for dynamic chain
mapping is acknowledged but deferred as it requires more significant
refactoring and was marked as non-blocking.
