fix(mcp): Update server API for mcp SDK 1.x compatibility

- Update create_server to return (server, init_options) tuple
- Update run_server to use stdio_server() async context manager
- Fix Server.run() call signature: (read_stream, write_stream, init_options)
- Add MCP server API compatibility tests
- Handle ExceptionGroup for Python 3.10+ compatibility

Fixes "unhandled errors in a TaskGroup" error when running MCP server.
